EDIBLE OIL DIVISION:

Data Group has several distinctive edible oil processing units. Vijay Solvex Ltd (VSL), Deepak Vegpro Pvt. Ltd. and Data Oils are the group's modern integrated oil seed processing complexes. Q2. What is the importance of fat in the diet?

Fats and oils provide essential nutrients in human diet. They provide the most concentrated source of energy of any foodstuff, supply essential fatty acids, contribute greatly to the feeling of satiety after eating, are carriers for fat soluble vitamins, and serve to make foods more palatable. Q3. What is hydrogenation and why is it used by food industry?

Hydrogenation is the process by which hydrogen is added directly to points of unsaturation in the fatty acids. Hydrogenation of fats has developed as a result of the need to (1) convert liquid oils to the semi-solid form for greater utility in certain food uses and (2) increase the oxidative and thermal stability of the fat or oil. Hydrogenation is an extremely important process as far as our food supply is concerned, because this processing imparts the desired stability and other properties to many edible oil products. MUSTARD OIL: A GEM OF COOKING OIL

Chances of heart disease drop by nearly 70% on use of Mustard oil as a cooking medium. The study done jointly by Harvard School of medicine, AIIMS, Delhi and St. John Hospital, Bangalore found the Mustard oil was "one of the healthiest edible oils".
Health experts recognize the mustard oil as having the best fatty acid ratio. When mustard oil is compared to other oils, mustard oil has :


lowest level of saturated fat (8%)
In today's world dietary guidelines require a reduction of saturated fat. Research studies have shown a link between saturated fat and increased serum cholesterol which, in turn, is associated with increased coronary heart disease risk. Mustard oil has the lowest level of saturated fat ( 8%) compared to all other oils.

Is relatively high in MUFA (70%)
Mustard oil has high mono-unsaturated fatty acid (MUFA) (70%). MUFA has been shown to reduce serum cholesterol levels and LDL cholesterol levels. MUFA does not affect levels of HDL cholesterol.

Moderate level of PUFA (Linoleic 12% and alpha-linolenic 10%)
N3 and N6, two classes of Polyunsaturated fatty acid (PUFA) are essential for human-being, as they cannot be synthesized in the body and must be supplied through the diet. Mustard oil contains a moderate level (12%) of linoleic acid and an appreciable amount (10%) of alpha-linolenic acid. Alpha-linolenic serum triglyceride levels as well as in reducing platelet aggregation and increasing blood clotting time. These anti-blood clotting effects play an important role in the reduction of coronary heart disease.

Excellent Source of natural Anti Oxidants found in form of Vitamin E
Anti-oxidants are found in the form of Vitamin E (tocopherol) in the mustard oil. Vitamin "E" is very important for normal growth and development of human beings. It prevents the free radical reaction, which in turn stops untimely ageing process. It helps in the rejuvenation of skin. It also gives good texture to the human skin. Aloo matar



Aloo matar recipe - Simple potato peas curry recipe made in North Indian style. This aloo mutter goes well with plain rice, roti or even with Jeera rice, South Indian coconut rice or ghee rice. It can be made in a kadai or presure cooker too to save some time.

Ingredients:

4 aloo/potatoes medium to large cubed

1/2 cup matar or as desired

2-3 tomatoes medium size pureed

2 large onions chopped finely

2 tbsps oil

1 green chili chopped

1/2 tsp cumin/ jeera

3/4 tbsp ginger garlic paste

1 tsp coriander powder

3/4 tsp red chilli powder

1/2 to 3/4 tsp garam masala

Salt as required

1/4 tsp turmeric

1/4 tsp kasuri methi

handful of chopped coriander leaves

How to make Aloo Matar :

Heat oil in a pan or kadai. Saute cumin till they begin to crackle. Add chopped onions, green chili and fry until lightly golden or pink. Add ginger garlic paste and saute until the raw smell disappears. Add tomato puree and saute for 2 mins. Add chili powder, garam masala, coriander powder, turmeric and salt. Saute until oil begins to separate from the masala. Add potatoes and peas. Saute for 2 mins. Add water just enough to cover the potatoes. Cook covered on a low to medium heat. Stir in between a few times, cook until the potatoes turn soft. You can adjust the consitstency by adding more water as needed. Add kasuri methi and mix well. Adjust salt if needed. Serve aloo matar with rice or roti

Dal Makhani is best teamed with Naan, missi roti or jeera rice.

Ingredients:

2-3 tablespoon soaked overnight red kidney beans

1 teaspoon Red chilli powder

4 tablespoon butter

1 large chopped onion

1/2 cup tomato puree

1/2 cup fresh cream

1/2 teaspoon ginger paste

1 pinch salt

2 inch chopped ginger

1 tablespoon sunflower oil

2 medium sliced & slit green chilli

1 teaspoon garam masala powder

1/2 cup soaked overnight urad dal

1/2 teaspoon garlic paste

How to make Dal Makhani:

Soak sabut urad and rajma overnight in four cups of water. Drain it and pressure cook in 3-4 cups of water with salt and half of the ginger and garlic paste for 15 minutes. Open the lid and cook on low heat till the rajma becomes tender, stirring continuously. Add half cream to the dal rajma mixture and reserve rest for garnish. Now, heat butter and oil in a pan. Add ginger, garlic and onion and saute till golden brown. Add slit green chilies, tomatoes puree and saute on high heat, stirring continuously. Add the remaining red chili powder and saute till oil floats on the top. Add the cooked dal and rajma. Add some water if the mixture is too thick. Add garam masala powder and adjust salt. Simmer on low heat till the dals are totally soft and well blended. Serve hot garnished with a little cream on top. Do not forget to add a dollop of butter in the bowl.

Ingredients:

1.5-2 tbsp coriander seeds

3 to 4 kashmiri red chilies deseeded

5-6 cashew nuts/ 3 tbsp cream

1 cup cubed onions about 2 large

1 cup chopped tomatoes deseeded about 2 large

1 tsp ginger garlic paste

1/2 tsp red chili powder (optional)

1/2 to 3/4 tsp garam masala powder

1/4 tsp kasuri methi

1/2 to 1 tsp ginger julienne

Few coriander leaves chopped finely

250 grams paneer / indian cottage cheese

1 medium onion cubed large, layers separated

1/2 cup capsicum cubed

How to make Kadai Paneer:

Powder finely or slightly coarse red chilies and coriander seeds. Heat oil in a pan and saute onions, cashews until onions turn transparent. Add tomatoes and saute . Cool this and blend to a smooth paste.Set this aside. In the same pan, add little oil and saute onions and capsicum on a high flame until half done and crunchy. Add paneer and toss for 1 to 2 mins. Set all these aside. Add little more oil and heat up the pan. Saute ginger garlic paste until the raw smell goes off. Add little more oil and heat up the pan. Saute ginger garlic paste until the raw smell goes off. Add the ground onion tomato paste and saute for 2 mins. Add garam masala and red chil powder If desired. Saute for another 2 mins. Add 1/2 to 3/4 cup water and salt. Allow it to boil until the gravy thickens. Add kasuri methi. Stir well. Add the sauted paneer, capsicum and onion. Stir well. Switch off the stove. Add ginger juliennes and coriander leaves. Cover and rest for 2 mins. Transfer to a serving bowl. Enjoy restaurant style kadai paneer gravy with roti, paratha or jeera rice.

Ingredients:

1.5 tablespoons coriander powder

1/4 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 medium green chili pepper, chopped

2 medium tomatoes, chopped

1 tablespoon cumin seed

1 teaspoon mustard seeds

1/4 cup oil, to fry ladyfinger

3/4 teaspoon salt

1/2kg bhindi (bhindi)

2 tablespoons oil, for seasoning

2 medium onions, chopped

How to make Bhindi Masala:

Heat oil in a wok. Once hot, toss in the cumin and mustard seeds. Allow to splutter. Once it stops spluttering, add green chilli and onions. Stir-fry on medium heat until browned. Remove from heat and keep aside. Pour 1/4 cup of oil in the same wok. Add the chopped bhindi and stir-fry for a few minutes until cooked and aromatic. This way, the bhindi will not split while cooking and the dish turns out very tasty. Remove the bhindi from heat, once fried and lightly browned. Add the sauteed onion mixture back to the wok and toss in the fried bhindi. Mix well to combine and allow to cook for a minute on medium heat. Now, add all the masala {spice} powders and mix well. Allow to cook for 5 minutes. Add the chopped tomatoes, mix well and cover the wok. Allow the flavours to blend well and the tomatoes to cook until softened. This takes about 7 minutes. Uncover, add salt and mix well. Allow to cook for 2 minutes on medium heat. Remove from flame and serve hot with Parathas.

How to make Gobi Masala:

Take a heavy bottomed pan, heat it with oil and temper with the items given under. Add curry leaves,chopped onions and fry till transparent. Add Ginger garlic paste and fry for 2 minutes in medium flame. Add the chopped tomatoes, salt and fry till it becomes soft and mushy. Add all the masala powders and fry in medium flame for 3 minutes or until raw smell goes off. Add the cleaned cauliflower florets, cut into bite sized pieces and add 1/4 cup water and mix well. Cook covered in medium flame until cauliflower is done. Add coriander leaves and fry for 3-5 more minutes. Serve with Roti or Parathas.

Chana Masala



"Chana Masala" is a traditional Punjabi recipe. This recipe is made using boiled chickpeas, tomatoes and garam masala. It is one of the most widely eaten dishes in India. With its mouth-watering, spicy and exotic flavour, it is a perfect dish to go for for you weekend breakfast, Sunday brunch or even as lunch. Pair it with a chilled glass of sweet lassi and you're done for the day. Tomato and garlic adds a tangy flavour to the dish which tastes amazing when paired with pooris aur bhaturas. If you're a spice junkie and have a special thing for everything spicy, then you can also alter this dish a bit by adding more green chillies as per your preference. Pair it with some exotic pickles and it will be a complete meal.

Ingredients:

2-3 cup soaked overnight chickpeas

3 sliced green chilli

4 cloves grated garlic

2-3 tablespoon powdered coriander powder

1 teaspoon powdered red chilli

4 tablespoon Refined oil

2 chopped onion

3 cup chopped tomato

1 inch grated ginger

1 teaspoon powdered turmeric

2-3 tablespoon powdered cumin powder

1 teaspoon powdered garam masala powder

2 pinches powdered salt

How to make Chana Masala:

Boil the chickpeas in 3-4 cup of water and keep it aside. Heat oil in a pan over medium flame. Once the oil is hot, add in chopped onions and saute them until golden brown. Keep stirring the onions as they might stick to the bottom of the pan. Once they have turned slightly pinkish-brown, add the ginger and garlic and reduce flame to low and cook for 2 to 3 minutes. Now add tomatoes, coriander powder, turmeric powder, cumin powder and red chilli powder. Cook until the oil starts to separate. Add the chickpeas . Sprinkle salt and some coriander leaves. Cook for 5-10 minutes and keep stirring. Now add garam masala powder and stir to mix well. Cover the pan with a lid and allow the dish to cook on low flame for about 2 minutes so that the flavours are well absorbed with the chickpeas. Once the dish is properly cooked, transfer it to a serving bowl and garnish with coriander leaves. Serve hot with rice or roti and raita of your choice.
